Yama's homemade sauce with horse radish

Tournedos Rossini is a French steak dish, named after 19th century composer Gioachino Rossini.  The dish comprises a beef tournedos (filet mignon) and topped with a slice of foie gras and it is garnished with slices of black truffle.  Chef Yama got inspired by Tornados Rossini and has created his own Rossini.
