Hiroaki Yamamoto is the owner and chef who is so completely absorbed in the development of cooking that he is a self-confessed cooking addict (Otaku). Based in Rotterdam in the Netherlands, facing the North Sea and neighboring Belgium and France, Hiroaki is passionate about creating cuisine and enjoys thinking of how to transform the unique locally-sourced ingredients. These include herbs, grasses and wild plants he finds in the Netherlands and especially, the Daslook which can be found in the Dutch forest in early summer. Hiroaki wished to express this special ingredient, the Daslook in the logo of Yama. The Japanese cuisine of Yama, based on the quality and technique of the fully-fledged traditional Japanese cuisine, has been endorsed by many delighted customers since opening in 2014.
Born in Hokkaido, Japan, 1983. Hiroaki spent 8 years mastering the skills of a professional chef of the traditional Japanese cusine at Yamazato restaurant with a Michelin star at the Hotel Okura Amsterdam after he relocated to the Netherlands in 2004. After that, Hiroaki worked as a sushi chef for two years at Huson restaurant in Rotterdam which is well known for international kitchen style. Hiroaki opened Japanese cusine Yama in Rotterdam with his partner Yuko Nakamori in January 2014, up to the present date.
